Sweet and Sour Vegetable Toast with Spicy Provolone

Ingredients
- 4 slices of homemade bread
- 1 red bell pepper
- 1 yellow bell pepper
- 1 small red onion
- 1 zucchini
- 2 tablespoons of balsamic vinegar
- 1 tablespoon of brown sugar
- Salt and pepper to taste
- Extra virgin olive oil
- 4 slices of spicy provolone
- Fresh basil (optional)
Preparation
- Start by slicing the peppers into strips and the zucchini into thin rounds. Thinly slice the onion.
