Corn Fritters

Ingredients
- 200 g of corn flour
- 100 g of all-purpose flour
- 2 eggs
- 150 ml of milk
- 100 g of grated cheese (pecorino or parmesan)
- 1 packet of baking powder for savories
- Salt to taste
- Pepper to taste
- Oil for frying
- (Optional) A pinch of aromatic herbs to taste (for example, chopped parsley)
Preparation
- In a large bowl, mix the corn flour with the all-purpose flour and baking powder.
- Add the eggs and mix again until you have a homogeneous mixture.
- Gradually incorporate the milk, continuing to stir to prevent lumps.
- Add the grated cheese, salt, pepper, and if desired, aromatic herbs.
- Mix all the ingredients well until you have a batter that is a bit thicker than usual.
- Let the mixture rest for about ten minutes.
- In the meantime, heat ample oil in a pan.
- When the oil is hot, fry small amounts of the mixture at a time, using a spoon to shape the fritters into rounds. They should swell slightly and become golden.
- Drain the fritters on paper towels to remove excess oil.
- Serve the corn fritters hot to best appreciate their taste.
You can accompany the fritters with a spicy tomato sauce or a cheese cream to add an extra touch of flavor.
