Ingredients

  • 250 g of chickpea flour
  • 100 g of chocolate chips
  • 100 g of brown sugar
  • 80 g of butter at room temperature

  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C and prepare one or two baking sheets by lining them with parchment paper.
  2. In a bowl, mix the soft butter with the brown sugar until creamy.
  3. Add the egg and vanilla extract, mixing well to incorporate them.
  4. In another bowl, combine the chickpea flour, baking soda, and a pinch of salt. Stir to evenly distribute the ingredients.
  5. Add the dry ingredients to the mixture of butter, egg, and sugar. Mix until you obtain a homogeneous dough.
  6. Gently fold in the chocolate chips into the dough.
  7. Use a spoon or an ice cream scoop to form dough balls and place them on the baking sheet, leaving some space between them.
  8. Slightly flatten the balls to give them a flatter shape.
  9. Bake in the oven for about 10-12 minutes or until the cookies are golden at the edges.
  10. Remove from the oven and let cool for a few minutes before transferring them to a rack to cool completely.
