Condensed Milk Plumcake

The condensed milk plumcake is a soft and delicious dessert, a great alternative to the traditional plumcake recipe. Here are the ingredients and the procedure to prepare this sweet and rich variant.

Ingredients

  • 200 g of condensed milk
  • 100 g of melted butter
  • 3 eggs
  • 200 g of all-purpose flour
  • 1 packet of baking powder
  • Grated zest of 1 lemon (optional)
  • 1 pinch of salt

Preparation

  1. Preheat the oven to 180° C and line a plumcake mold with parchment paper.
  2. In a bowl, mix the melted butter with the condensed milk until you get a homogeneous mixture.
  3. Separate the yolks from the whites and add the yolks to the mixture of condensed milk and butter. Mix well.
  4. Add the sifted flour, baking powder, and grated lemon zest, if you decide to use it, and mix until you obtain a smooth and lump-free batter.
  5. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the whipped egg whites into the batter, proceeding from bottom to top so as not to deflate them.
  6. Pour the batter into the plumcake mold and bake for about 30-40 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, let the plumcake cool in the turned-off oven with the door slightly open for about 10 minutes, then transfer it to a wire rack to finish cooling.
