Colored Eggs

Colored eggs are a fun and creative way to add a festive touch to any occasion. Here I’ll describe a simple method to dye hard-boiled eggs using either natural or synthetic food colors.

Ingredients

  • Eggs (as many as you want to color)
  • White vinegar
  • Natural or synthetic food dyes (beet for pink/red, turmeric for yellow, red cabbage for blue/purple, spinach for green, etc.)
  • Water

Preparation

  1. Place the eggs in a pot and cover with cold water. Bring the water to a boil and, once boiling, reduce the heat and let the eggs simmer for 9-12 minutes.
  2. While the eggs are cooling, prepare the dyes. For natural dyes, you can cook the plant ingredients in water to extract the colors (for instance, cook chopped beets for red color, or red cabbage for blue).
  3. Strain the liquids to remove pieces of the vegetables and add one tablespoon of white vinegar to each cup of dye liquid. The vinegar helps the color adhere better to the eggshell.
  4. When the eggs are cooked, remove them from the water and place them in cold water to cool down faster.
  5. Once cool, remove them from the water and, if desired, create patterns on the surface of the eggs using elastic bands or stickers which will prevent the dye from adhering in those areas.
  6. Submerge the eggs in the dye liquids for at least 30 minutes; the longer the eggs stay in the dye, the more intense the color will be.
  7. Remove the eggs from the dye and place them on a tray or rack to dry.
  8. Once dry, the eggs are ready to be used for decoration or to be served.

To make this recipe more “Italian”, you might incorporate Mediterranean spices or herbs into the dye liquids for a light thematic fragrance. For example, you could add rosemary or oregano into the dye for Italy’s colors, for that citrusy and aromatic touch.
