Cold Yogurt Cake

The cold yogurt cake is a fresh and delicious dessert, perfect for warm days or for those looking for a lighter sweet alternative. Here is a basic recipe you can follow:

Ingredients

  • 250g of dry biscuits (like Digestive)
  • 100g of melted butter
  • 500g of Greek yogurt
  • 100g of powdered sugar
  • 12g of sheet gelatin (or agar agar if you prefer a vegetarian option)
  • Juice of 1 lemon
  • Fresh fruit or fruit coulis for decoration (optional)

Preparation

  1. Start by crushing the dry biscuits until you get a coarse flour. Mix the crushed biscuits with the melted butter.
  2. Pour the mixture of biscuits and butter at the bottom of a springform pan and press it down well to form a compact base. Put it in the fridge for at least 30 minutes to harden.
  3. Meanwhile, soak the gelatin in cold water to soften it.
  4. In a bowl, mix the Greek yogurt with the powdered sugar and add the lemon juice.
  5. Heat a little water in a saucepan and dissolve the squeezed gelatin, then add it to the yogurt mixture and stir well until you get a smooth mixture.
  6. Pour the mixture over the now-solidified biscuit base and level it with a spatula.
  7. Place the cake in the fridge and let it cool for at least 4 hours, or until it is well set.
  8. Before serving, decorate the cake with fresh fruit or a fruit coulis of your choice.
