Cold Whole Wheat Mezze Maniche with Salmon, Fennel and Feta

Ingredients
- 250 g of whole wheat mezze maniche
- 200 g of smoked salmon
- 100 g of feta cheese
- Fennel seeds (to taste)
- Fresh fennel herb (if available) or alternatively dill
- Juice of 1 lemon
- 2 tablespoons of extra virgin olive oil
- Salt and black pepper to taste
- Grated zest of 1/2 lemon (optional for an extra touch)
- Capers (optional, to add an additional note of flavor)
Preparation

Bring a pot of salted water to a boil and cook the whole wheat mezze maniche according to the package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking and cool them completely. Let them drain well.

While the pasta is cooking, cut the smoked salmon into strips or small pieces, and place it in a large bowl.

Crumble the feta cheese with your hands or cut it into small cubes and add it to the bowl with the salmon.

Add the cooled pasta to the salmon, feta, and fennel mix. Mix well to combine all the ingredients.

Let the pasta rest in the refrigerator for at least 30 minutes before serving, this will allow the flavors to blend better.
