Cold wafer and coffee ring cake
17/11/2023I will describe to you how to prepare a delicious Cold wafer and coffee ring cake, a luscious variation that combines the intense flavor of coffee with the crunchiness of the wafers. Perfect as a spoon dessert for an afternoon break or as a meal finale.
Ingredients
- 200 g of hazelnut wafers
- 150 ml of cold espresso coffee
- 250 g of mascarpone
- 100 g of powdered sugar
- 200 ml of whipping cream
- 2 tablespoons of coffee liqueur (optional)
- Cocoa powder for garnishing
Preparation
- Start by coarsely crushing the wafers, leaving some whole for the final decoration.
- Prepare the espresso coffee and let it cool. If you prefer, you can add the coffee liqueur to the already cold coffee for a more intense flavor and a more “adult” effect.
- In a bowl, work the mascarpone with powdered sugar until you obtain a smooth and homogeneous cream.
- Separately, whip the very cold cream until it is firm.
- Gently fold the whipped cream into the mascarpone mixture, being careful not to deflate everything.
- Now take a ring mold and begin creating the layers: put a first layer of mascarpone cream, then a layer of crumbled wafers and moisten with a bit of coffee.
- Continue with the layers until you run out of ingredients, finishing with a layer of cream.
- Let the ring cake rest in the refrigerator for at least 3-4 hours, or even better, overnight.
- Before serving, flip the ring cake onto a serving plate and decorate with the whole wafers and a dusting of cocoa powder.
A variation might be to replace the hazelnut wafers with chocolate wafers, for an even more intense and chocolatey taste.
