Strawberry Chilled Tart

The strawberry chilled tart is a fresh and delightful dessert, perfect for spring and summer. Here is how to prepare it with an Italian touch:

Ingredients

For the base:

  • 250 g of dry biscuits (such as Digestive)
  • 100 g of melted butter

For the cream:

  • 250 g of ricotta
  • 100 g of icing sugar
  • 1 sachet of vanillin
  • grated zest of 1 lemon

For the topping:

  • 500 g of fresh strawberries
  • Juice of 1/2 lemon
  • 2 tablespoons of sugar
  • cakes gelatin (or you can use agar agar for a plant-based version)

Preparation

  1. Start by preparing the tart base: crush the biscuits in a food processor until they achieve a consistency similar to that of breadcrumbs. Mix the crushed biscuits with the melted butter until you have a homogeneous mixture.
  2. Line the bottom of a springform pan with parchment paper and press the biscuit mixture onto the bottom to form the base of the tart. Place in the refrigerator to harden for about 30 minutes.
  3. In the meantime, prepare the cream by mixing the ricotta, icing sugar, vanillin, and grated lemon zest until you obtain a soft and fluffy mixture.
  4. Remove the biscuit base from the refrigerator and spread the ricotta cream evenly on top. Put back in the refrigerator for at least one hour.
  5. Clean the strawberries and slice them. Arrange them on top of the ricotta cream, creating a beautiful red pattern.
  6. Prepare the cake gelatin following the instructions on the package (or dissolve the agar agar in hot water with sugar and lemon juice if you opt for the plant-based version) and gently pour it over the strawberries to add shine and preserve the freshness of the fruit.
  7. Let the tart rest in the refrigerator for a few hours before serving.
