Cold Strawberry and White Chocolate Cake

I describe the recipe for the cold strawberry and white chocolate cake, a refreshing and indulgent dessert perfect for the hot season or to end a meal with sweetness.

Ingredients

  • 250 grams of dry biscuits (like Digestive)
  • 100 grams of melted butter
  • 300 grams of white chocolate
  • 250 ml of fresh liquid cream
  • 500 grams of fresh strawberries
  • 100 grams of icing sugar
  • 12 grams of sheet gelatin (fish glue)
  • Strawberries for decoration

Preparation

  1. Begin by finely chopping the biscuits in a blender or with the help of a rolling pin, then mix them with the melted butter. Pour the mixture into a springform pan (preferably 22-24 cm in diameter) lined with parchment paper and press it down well to form the base of the cake. Put in the refrigerator to set for about 30 minutes.

  2. In the meantime, soften the sheet gelatin in cold water for about 10 minutes.

  3. Cut the strawberries into small pieces, saving some for the final decoration. Place the chopped strawberries in a saucepan with icing sugar and cook over medium heat until you have a compote, then blend everything and strain to remove the seeds.

  4. Melt the white chocolate in a double boiler or in the microwave being careful not to overheat it. Heat a small part of the liquid cream and dissolve the well-squeezed gelatin in it. Add it to the melted white chocolate.

  5. Whip the remaining fresh cream and gently fold it into the white chocolate mixture, then add the strawberry compote and mix until you have a uniform mixture.

  6. Pour the cream obtained over the firmed biscuit base and level it well. Put the cake in the refrigerator for at least 4 hours, but preferably overnight.

  7. Before serving, decorate with the strawberries set aside and, if desired, with swirls of whipped cream or white chocolate shavings.

Curiosity

White chocolate does not contain solid cocoa, but is made of cocoa butter, sugar, and milk derivatives, giving it a rather sweet and rich taste. Paired with the freshness of strawberries, it creates a pleasant contrast that is very popular in summer desserts.
