Cold Crumbled Ricotta and Lemon
17/11/2023Here is the recipe for a delicious Cold Crumbled Ricotta and Lemon, perfect for a summer day or any occasion when you want a fresh and slightly tangy dessert.
Ingredients
- 250 g of dry biscuits (like Digestives)
- 100 g of melted butter
- 500 g of ricotta cheese
- 100 g of icing sugar
- Grated zest of 1 lemon (untreated)
- Juice of 1 lemon
- 8 g of sheet gelatin (or fish glue)
- 40 ml of water (to dissolve the gelatin)
Preparation
- Start by finely chopping the biscuits in a mixer or putting them in a bag and crushing them with a meat mallet until you achieve a sandy consistency.
- In a bowl, mix the chopped biscuits with the melted butter until you obtain a homogeneous mixture.
- Take a springform pan (ideally about 22 cm in diameter) and spread the biscuit mixture on the bottom, pressing it down to create a compact base. Place the mold in the refrigerator to firm up for about 30 minutes.
- Meanwhile, in a bowl, mix the ricotta with the icing sugar until you have a smooth and lump-free mixture.
- Add the grated lemon zest and juice to the ricotta and mix well.
- Soak the gelatin in cold water for about 10 minutes, then squeeze it out and dissolve it in 40 ml of hot water. Let it cool slightly.
- Add the dissolved gelatin to the ricotta and lemon mixture and combine everything carefully.
- Pour the ricotta and lemon filling onto the firmed biscuit base and level it with a spatula.
- Put the Crumble in the refrigerator for at least 4 hours, better if overnight, to allow the cake to set well.
- When ready to serve, you can decorate the crumble with candied lemon zest, fresh lemon slices, or a sprinkle of icing sugar.
