Cold Roast with Sauce

The recipe consists of a roast that is cooked, allowed to cool down, and then served cold accompanied by a sauce. The meat can be beef, pork, or chicken, depending on preferences. Ingredients
For the roast:
- 800 g of roast beef (or another cut suitable for roasting)
- Salt and pepper to taste
- Extra virgin olive oil
- Herbs as desired (rosemary, bay leaves, garlic, etc.)
For the sauce:
- 200 ml of mayonnaise
- 1 tablespoon of salted capers
- 2 oil-packed anchovies
- 1 tablespoon of Dijon mustard (or other mustard of choice)
- Fresh parsley to taste
- Juice of 1 lemon
Preparation
- Start by preparing the meat: tie the roast beef with kitchen twine, so it maintains its shape while cooking.
- Massage the meat with some oil, salt and pepper, and if you like, also add herbs such as rosemary or bay leaves.
- Heat a large pan and sear the meat on all sides until it becomes golden. This step is to lock the juices inside the meat.
- Transfer the meat to a tray and bake in a preheated oven at 180 °C for about 20-30 minutes, depending on the desired degree of doneness (rare, medium, well done).
- Once cooked, remove the roast beef from the oven and let it cool down completely. Then store it in the refrigerator until serving time.
- For the sauce, put the desalted capers, well-drained anchovies, mustard, chopped parsley, and lemon juice in a blender. Blend everything until you obtain a smooth sauce. Adjust salt if necessary.
- Slice the cold roast thinly and arrange it on a serving platter.
- Serve the roast accompanied by the prepared sauce.
An interesting note about this dish is the possibility of pairing it with different sauces according to taste. For example, the addition of aromatic herbs or spices can vary the flavor profile of the accompanying sauce, making your culinary experience unique each time. Remember that cold roast is also an excellent picnic dish because it can be easily transported and eaten without the need for heating.
