Ingredients
- 250 g of dry biscuits (for example, digestive)
- 100 g of melted butter
- 500 g of pumpkin (already cleaned and cooked, preferably steamed or baked to concentrate the flavor)
- 400 g of cream cheese (like Philadelphia)
- 100 g of icing sugar (adjust to taste according to your preference)
- 1 sachet of vanilla or vanilla extract
- 12 g of gelatin sheets (or 2 teaspoons of powdered gelatin)
- Juice of half a lemon
- 1 teaspoon of cinnamon powder
- A pinch of nutmeg
- A pinch of ground ginger (optional)
Preparation
- Start by finely grinding the dry biscuits. Mix them with the melted butter until a homogeneous mixture is obtained.
- Pour the mixture into a springform pan with a diameter of about 22-24 cm, pressing well on the bottom to create the base of the cheesecake. Place in the refrigerator for about 30 minutes.
- In the meantime, soak the gelatin in cold water for about 10 minutes (if you are using gelatin sheets).
- Blend the cooked pumpkin until smooth and without lumps.
- In a large bowl, work the cream cheese together with the icing sugar, vanilla, cinnamon, nutmeg, and ginger until a homogeneous cream is obtained.
- Squeeze the soaked gelatin to remove excess water, then dissolve it with the warmed lemon juice (or follow the instructions of the powdered gelatin if you are using it).
- Add the dissolved gelatin to the cream cheese and mix well.
- Incorporate the pumpkin puree into the cream cheese and mix until a homogeneous mixture is obtained.
- Pour the filling onto the cooled biscuit base, level the surface, and let it cool in the refrigerator for at least 4 hours, better if overnight.
- Before serving, decorate your cheesecake with whipped cream and a pinch of cinnamon or with pecan nuts for a crunchy touch.
