Cold Pineapple Tart

The cold pineapple tart is a cool and delicious dessert, perfect for hot days. Here is the recipe with an Italian touch:

Ingredients

For the base:

  • 300 g of dry biscuits
  • 150 g of melted butter

For the cream:

  • 250 g of mascarpone
  • 200 ml of cream to whip
  • 80 g of powdered sugar
  • 1 sachet of vanillin

For the decoration:

  • Fresh pineapple (slices or pieces, according to preference)
  • Gelatine sheets or powder (to glaze the pineapple)
  • Pineapple juice (to soften the gelatine)

Preparation

For the base:

  1. Finely grind the biscuits in a food processor until you get a sandy consistency.
  2. Mix the crushed biscuits with the melted butter until you achieve a homogeneous mixture.
  3. Line the bottom of a springform pan with parchment paper and press the biscuit mixture onto the bottom, creating an even layer. Refrigerate to firm up.

For the cream:

  1. In the meantime, whip the mascarpone with the powdered sugar and vanillin until smooth and even.
  2. In another bowl, whip the cream until it is very firm.
  3. Gently fold the whipped cream into the mascarpone mixture, trying not to deflate it.
  4. Pour the obtained cream over the now-consolidated biscuit base, and level with a spatula.
  5. Put the tart back in the fridge for at least a couple of hours, or until the cream is well set.

For the decoration:

  1. Cut the fresh pineapple into slices or pieces, according to your preference.
  2. Prepare the gelatine following the instructions on the package, but using pineapple juice instead of water for a more intense flavor.
  3. Arrange the pieces of pineapple on top of the mascarpone cream and, with a kitchen brush, gently brush the surface with the still liquid gelatine.
  4. Leave in the fridge for at least an hour, or until the gelatine on the fruit has completely solidified.
