No-Bake Peach and Amaretti Cake
17/11/2023Here is the recipe for a delicious No-Bake Peach and Amaretti Cake, a refreshing and pleasantly aromatic summer dessert that does not require oven baking.
Ingredients
- 250 g of amaretti biscuits
- 500 g of canned peaches
- 400 g of ricotta cheese
- 200 ml of whipping cream
- 100 g of powdered sugar
- 50 ml of orange or peach liqueur (optional)
- Gelatin sheets (quantity as per instructions on the package, usually 12 g)
- Syrup from the canned peaches for soaking
- Some fresh peaches for decoration (optional)
Preparation
- Roughly chop the amaretti biscuits and set aside a handful for the final decoration.
- Whip the cream and place it in the refrigerator.
- In a bowl, work the ricotta with the powdered sugar until you get a smooth mixture.
- Gently fold the whipped cream into the ricotta mixture, moving the spoon from the bottom up to not deflate the cream.
- Soak the gelatin sheets in cold water for the time indicated on the package.
- Cut the canned peaches into small cubes and keep the syrup aside.
- In a small saucepan, heat some of the peach syrup and dissolve the well-squeezed gelatin in it. Then, blend it with the rest of the cold syrup.
- Add the chosen liqueur to the peach syrup with the gelatin and pour the liquid mixture into the cream of ricotta and cream, continuing to stir gently.
- Add the peach cubes and the chopped amaretti as well, and carefully mix everything together.
- Line a springform pan with parchment paper and pour the mixture into it, leveling well with a spatula.
- Sprinkle the surface with the amaretti biscuits set aside and, if desired, decorate with slices of fresh peaches.
- Let the cake rest in the refrigerator for at least 4 hours, or even better overnight.
Trivia
The combination of peaches and amaretti is typical of Piedmont, a region famous for its production of excellent varieties of these stone fruits. The match between the sweetness of the peaches and the pronounced flavor of the amaretti makes this no-bake cake a harmonious and inviting dessert.
