Cold Pasta with Pancetta, Cherry Tomatoes, Arugula, and Parmesan Flakes

Ingredients
- 350 g of short pasta (penne, fusilli, farfalle, etc.)
- 150 g of diced pancetta
- 250 g of cherry tomatoes
- 100 g of arugula
- 100 g of Parmesan flakes
- Extra virgin olive oil to taste
- Salt and pepper to taste
Preparation
- Boil a pot of salted water and, when it reaches a boil, cook the pasta according to the time indicated on the package to achieve al dente texture.
- Meanwhile, sauté the diced pancetta in a non-stick pan until it becomes crispy. If you want, you can add a drizzle of oil, but remember that the pancetta will release its own fat during cooking.
- Wash the cherry tomatoes and cut them in half or into four parts, depending on your preference.
- Wash and dry the arugula well, removing any large stems or damaged leaves.
- Once cooked, drain the pasta and transfer it to a large bowl. Add a drizzle of extra virgin olive oil and mix well to prevent the pasta from sticking.
- Let the pasta cool to room temperature or run it under cold water to stop the cooking and cool it quickly.
- Add the crispy pancetta, cherry tomatoes, arugula, and Parmesan flakes to the cooled pasta. Season with salt, pepper, and an additional drizzle of oil, if necessary.
- Gently mix all the ingredients to combine the flavors well.
- Taste and adjust the seasoning if necessary.
- Your cold pasta with pancetta, cherry tomatoes, arugula, and Parmesan flakes is ready to be served!
