Cold Mascarpone, Coconut, and Chocolate Cake

Ingredients

  • 250 g of dry biscuits (like Digestives)
  • 150 g of melted butter
  • 250 g of mascarpone
  • 50 g of powdered sugar
  • 200 ml of whipping cream
  • 100 g of shredded coconut
  • 100 g of dark chocolate
  • 2 tablespoons of milk

Preparation

  1. Start by crushing the dry biscuits until they are crumbled. You can do this using a food processor or by placing them in a bag and rolling them with a rolling pin. Pour the crumbs into a bowl and mix with the melted butter to get a homogeneous mixture.
  2. Line the bottom of a springform pan (preferably about 22 cm in diameter) with parchment paper, then pour in the biscuit and butter mixture and press down well with the back of a spoon to form the base of the cake. Refrigerate to firm up for at least 30 minutes.
  3. In the meantime, in a bowl, work the mascarpone with the powdered sugar using a spatula or electric mixer until well blended.
  4. In another bowl, whip the cream until it is fluffy and firm.
  5. Gently fold the whipped cream into the mascarpone, add half of the shredded coconut, and mix with movements from the bottom up to avoid deflating the mixture.
  6. Transfer the obtained cream onto the base of biscuits in the refrigerator and level it with a spatula.
  7. Melt the dark chocolate in a double boiler with two tablespoons of milk until you get a smooth sauce. Let it cool slightly, then pour it over the mascarpone and coconut cream, leveling the surface well.
  8. Sprinkle the surface with the remaining shredded coconut and put the cake in the refrigerator for at least 4 hours, better if all night.
  9. Before serving, gently unmold the cake and, if you like, decorate with chocolate shavings or other decorative elements at will.
