Cold Mascarpone, Coconut, and Chocolate Cake

Ingredients
- 250 g of dry biscuits (like Digestives)
- 150 g of melted butter
- 250 g of mascarpone
- 50 g of powdered sugar
- 200 ml of whipping cream
- 100 g of shredded coconut
- 100 g of dark chocolate
- 2 tablespoons of milk
Preparation
- Start by crushing the dry biscuits until they are crumbled. You can do this using a food processor or by placing them in a bag and rolling them with a rolling pin. Pour the crumbs into a bowl and mix with the melted butter to get a homogeneous mixture.
- Line the bottom of a springform pan (preferably about 22 cm in diameter) with parchment paper, then pour in the biscuit and butter mixture and press down well with the back of a spoon to form the base of the cake. Refrigerate to firm up for at least 30 minutes.
- In the meantime, in a bowl, work the mascarpone with the powdered sugar using a spatula or electric mixer until well blended.
- In another bowl, whip the cream until it is fluffy and firm.
- Gently fold the whipped cream into the mascarpone, add half of the shredded coconut, and mix with movements from the bottom up to avoid deflating the mixture.
- Transfer the obtained cream onto the base of biscuits in the refrigerator and level it with a spatula.
- Melt the dark chocolate in a double boiler with two tablespoons of milk until you get a smooth sauce. Let it cool slightly, then pour it over the mascarpone and coconut cream, leveling the surface well.
- Sprinkle the surface with the remaining shredded coconut and put the cake in the refrigerator for at least 4 hours, better if all night.
- Before serving, gently unmold the cake and, if you like, decorate with chocolate shavings or other decorative elements at will.
