Cold Lettuce Wraps
17/11/2023Cold lettuce wraps are a fresh and light dish, perfect for summer or as a tasty appetizer throughout the year. Let’s see how to prepare them with an Italian twist.
Ingredients
- Lettuce (the largest and crunchiest leaves)
- 150 g of fresh ricotta
- 50 g of grated Parmesan
- Salt and pepper to taste
- A bunch of fresh basil
- Sun-dried tomatoes in oil to taste
- Pitted black olives to taste
- Extra virgin olive oil to taste
- Balsamic vinegar (optional, for decoration)
Preparation
-
Begin by carefully washing the lettuce leaves, choosing the largest and crunchiest. Gently dry them without breaking.
-
In a bowl, mix the ricotta with the grated Parmesan. Salt and pepper to taste.
-
Finely chop the fresh basil, oil-packed sun-dried tomatoes, and pitted black olives, and add them to the ricotta and Parmesan mixture.
-
Take a lettuce leaf and place a spoonful of the ricotta mixture in the center.
-
Close the wrap by first folding the sides of the leaf inward and then rolling from the base towards the tip, making a small package.
-
Continue until all ingredients are used up.
-
Arrange the wraps on a serving plate. You may drizzle some extra virgin olive oil and a few drops of balsamic vinegar over the wraps to decorate and add flavor.
