Cold Lettuce Wraps

Ingredients

  • Lettuce (the largest and crunchiest leaves)
  • 150 g of fresh ricotta
  • 50 g of grated Parmesan
  • Salt and pepper to taste
  • A bunch of fresh basil
  • Sun-dried tomatoes in oil to taste
  • Pitted black olives to taste
  • Extra virgin olive oil to taste
  • Balsamic vinegar (optional, for decoration)

Preparation

  1. Begin by carefully washing the lettuce leaves, choosing the largest and crunchiest. Gently dry them without breaking.

  2. In a bowl, mix the ricotta with the grated Parmesan. Salt and pepper to taste.

  3. Finely chop the fresh basil, oil-packed sun-dried tomatoes, and pitted black olives, and add them to the ricotta and Parmesan mixture.

  4. Take a lettuce leaf and place a spoonful of the ricotta mixture in the center.

  5. Close the wrap by first folding the sides of the leaf inward and then rolling from the base towards the tip, making a small package.

  6. Continue until all ingredients are used up.

  7. Arrange the wraps on a serving plate. You may drizzle some extra virgin olive oil and a few drops of balsamic vinegar over the wraps to decorate and add flavor.
