Ingredients

  • 200 g of dry biscuits (like Digestive or Oro Saiwa)
  • 100 g of melted butter
  • 500 ml of milk
  • 4 egg yolks
  • 100 g of sugar
  • 50 g of 00 flour (or cornstarch for a lighter version)
  • 1 vanilla pod (or vanilla essence)
  • Fresh fruit of your choice for decoration (strawberries, kiwi, peaches, etc.)
  • Gelatine in sheets or powder (optional, for the fruit topping)

Preparation

  1. Start by finely crushing the biscuits and mix them with the melted butter. Spread this mixture into a springform pan to create a compact base and put it in the fridge to set for at least 30 minutes.

  2. In the meantime, in a saucepan, heat the milk with the vanilla pod slit lengthwise (or add vanilla essence).

  3. In a bowl, whisk the yolks with the sugar until you have a light and frothy mixture. Add the sifted flour a little at a time, continuing to whisk to avoid lumps.

  4. Remove the vanilla pod from the warm milk if you used it, and slowly pour the milk over the yolk mixture, stirring continuously.

  5. Transfer everything back into the saucepan and cook over medium heat, stirring constantly until the cream thickens.

  6. Pour the obtained cream over the biscuit base and let it cool. Once cold, put it in the fridge for at least 4 hours.

  7. If you wish to add fresh fruit, before removing the pie from the fridge, prepare a gelatin following the instructions on the package and arrange the cut fruit on top of the cream. Cover with the gelatin to keep the fruit fresh and shiny.

  8. Before serving, gently remove the No-bake Cream Pie from the springform pan.
