Chilled Coconut and Chocolate Cake

Ingredients

For the base:

  • 200 g of dry biscuits
  • 100 g of melted butter

For the coconut filling:

  • 200 ml of coconut milk
  • 200 ml of whipping cream
  • 100 g of sugar
  • 150 g of grated coconut
  • 12 g of gelatin sheets (or fish glue)

For the chocolate ganache:

  • 200 g of dark chocolate
  • 200 ml of whipping cream

Preparation

Base

  1. Finely crush the dry biscuits in a food processor, or place them in a bag and roll over them with a rolling pin until they are powdered.
  2. In a bowl, combine the crushed biscuits and the melted butter. Mix until you have a homogenous mixture.
  3. Press the mixture into a springform pan lined with parchment paper, forming a compact base. Refrigerate for about 30 minutes to cool.

Coconut Filling

  1. Soak the gelatin sheets in cold water for about 10 minutes.
  2. In a saucepan, heat the coconut milk with the sugar without bringing it to a boil. Squeeze out the gelatin sheets and add them to the warm coconut milk, stirring until completely dissolved.
  3. Let the coconut milk and gelatin mixture cool, then add the grated coconut.
  4. Whip the very cold cream and gently fold it into the coconut milk mixture.
  5. Pour this filling over the cooled biscuit base and leave it in the refrigerator for at least 4 hours, or until it has set.

Chocolate Ganache

  1. Chop the chocolate and put it in a bowl.
  2. In a saucepan, bring the whipping cream to a boil and then pour it over the chopped chocolate.
  3. Stir until the chocolate is completely melted and you have a smooth and homogenous ganache.
  4. Allow the ganache to cool to room temperature.
  5. When the coconut cake in the fridge has set, pour the ganache over it and smooth the surface.
  6. Put the cake back in the refrigerator and let the ganache set, which will take about 1-2 hours.

Once ready, you can decorate the cake with coconut flakes or with dollops of whipped cream for an extra touch of elegance.
