No-bake Chocolate Cake
17/11/2023The no-bake chocolate cake is a delicious dessert that is prepared without the need for baking, perfect for summer days or when you want something sweet and rich without turning on the oven. Here’s how to make it:
Ingredients
- 200 g of dry biscuits (like Digestive)
- 100 g of melted butter
- 250 g of dark chocolate
- 100 ml of fresh liquid cream
- 50 g of powdered sugar
- 250 g of mascarpone
- 2 tablespoons of chocolate or coffee liqueur (optional)
- Cocoa powder q.b. to decorate
Preparation
- Start with the base. Finely chop the biscuits in a mixer until they have a sand-like consistency. Mix the melted butter with the chopped biscuits until well combined.
- Line the bottom of a springform pan (preferably 22-24 cm in diameter) with parchment paper. Pour the biscuit and butter mixture into the pan and press down firmly with the back of a spoon or your hands to create a compact base. Refrigerate to set for about 30 minutes.
- For the filling, break the dark chocolate into pieces and melt it in a double boiler or microwave, being careful not to burn it. Allow to cool slightly.
- In a bowl, work the mascarpone with the powdered sugar until you get a smooth cream.
- Incorporate the fresh cream into the mascarpone mixture, mixing gently.
- Add the melted chocolate (make sure it is not too hot) and, if desired, the liqueur, to the mascarpone and cream mixture, blending everything with gentle movements from the bottom up.
- Pour the mixture over the now-set biscuit base and level with a spatula.
- Put the cake in the refrigerator for at least 3-4 hours, better if overnight, to allow the filling to stabilize and firm up.
- Before serving, dust the surface with cocoa powder for a final touch and an even more intense flavor.
An Italian Touch:
To further enrich the cake, you can add chopped hazelnuts or flakes of dark chocolate to the cream for a contrast in texture and a more complex flavor.
