No-bake Chocolate and Apricot Muffins
17/11/2023The no-bake chocolate and apricot muffins are a simple and delicious dessert, perfect for a summer snack or as an after-dinner treat. Here is the recipe:
Ingredients
- 200g of dark chocolate
- 100g of butter
- 3 eggs
- 150g of granulated sugar
- 100g of all-purpose flour
- 1 teaspoon of baking powder for sweets
- A pinch of salt
- 100g of dried apricots
- Icing sugar (optional, for decoration)
Preparation

Start by cutting the dried apricots into small pieces. If you prefer a softer texture, you can soften them by soaking in hot water for a few minutes. Then, drain and dry them.

Melt the chocolate in a double boiler with the butter. While the chocolate and butter are melting, in a large bowl beat the eggs with the sugar until you have a light and fluffy mixture.

Once the chocolate and butter are completely melted and combined, remove them from the heat and let them cool down for a few minutes.

Incorporate the melted chocolate into the mixture of eggs and sugar, mixing gently from the bottom up so as not to deflate the mixture.

Sift the flour together with the baking powder and a pinch of salt, then add them to the mixture, stirring until you get a smooth batter.

Add the chopped dried apricots to the batter and mix to distribute them evenly.

Prepare a muffin tin with paper liners and fill each one with the mixture, taking care to leave a little space from the edge because the muffins will expand during cooling.

Refrigerate for at least 2 hours or until the muffins have cooled and set. These muffins do not require baking, as the consistency will be given by the chocolate and butter firming up.

Once cooled, you can dust the no-bake chocolate and apricot muffins with icing sugar, for an extra touch of sweetness and decoration, if desired.
