Ingredients
- 200 g of couscous (pre-cooked)
- 200 ml of chicken broth or hot water
- 1 chicken breast
- Extra virgin olive oil
- Juice of 1 lemon
- 1 teaspoon of turmeric
- Salt and pepper to taste
- Vegetables of your choice (for example, cherry tomatoes, cucumbers, bell peppers)
- Fresh aromatic herbs (mint, parsley, coriander)
- Black or green olives
Preparation
- Prepare the couscous following the instructions on the package. Usually, this involves pouring the chicken broth or hot water over the couscous into a bowl, covering with a plate or lid, and letting it stand for about 5 minutes. After that, fluff it with a fork, adding a drizzle of olive oil.
- Season the chicken breast with salt, pepper, and turmeric and cook. You can pan-fry it with a bit of oil or bake it in the oven.
- Once cooked, let the chicken cool and then chop it into small pieces or shred it.
- Wash and cut the vegetables of your choice into uniformly sized pieces for a crunchy and colorful salad.
- In the bowl with the cooled couscous, add the chicken, vegetables, a pinch of salt, pepper, lemon juice, and a drizzle of olive oil.
- Mix all the ingredients well, and finally, add the chopped fresh aromatic herbs and olives.
- Let it rest in the refrigerator before serving, so the flavors can meld together.
