Cherry Cold Log

The cherry cold log is a fresh and delicious dessert, perfect for summer or to sweetly conclude a dinner among friends. Here is how to prepare it.

Ingredients

  • 250 grams of pitted cherries
  • 500 ml of whipping cream
  • 200 grams of ladyfingers or dry biscuits
  • 100 grams of powdered sugar
  • 100 ml of water
  • 50 ml of cherry liqueur or Maraschino (optional)
  • Grated zest of 1 lemon (preferably organic)
  • Dark chocolate shavings for decoration

Preparation

  1. Begin by preparing a syrup with the water and powdered sugar, heating them in a small pot until the sugar has completely dissolved. Allow to cool.
  2. Meanwhile, whip the very cold cream in a bowl, adding the grated lemon zest towards the end to give a touch of freshness.
  3. If you have decided to use the liqueur, add it to the cooled syrup. This step is optional, and you can omit it if you prefer not to use alcohol.
  4. Slightly soak the ladyfingers or biscuits in the syrup and begin to assemble your log, laying them on a sheet of clear plastic wrap so that you can easily wrap it.
  5. Alternate layers of ladyfingers and whipped cream, adding the pitted cherries between the layers.
  6. Once finished, wrap the log with the plastic wrap creating a cylinder, and place it in the freezer for at least 4 hours.
  7. Before serving, remove the log from the freezer and let it soften for a few minutes. Decorate it with dark chocolate shavings and some whole cherries for a touch of color.
  8. Serve in slices and enjoy the contrast between the creaminess of the cream and the tanginess of the cherries.

This is a simple recipe but with great effect. A tip: you can personalize your log by adding, for example, chocolate pieces inside or using flavored biscuits for an even more unique taste.
