Cold Cappuccino Cake

The Cold Cappuccino Cake is a delicious and relatively simple dessert that requires no baking. It’s an ideal recipe for those who love coffee and spoon desserts. Here is the recipe to prepare it:

Ingredients

  • 200 g of dry biscuits (like Oro Saiwa or Digestive)
  • 100 g of butter
  • 300 g of mascarpone
  • 200 ml of fresh cream for desserts
  • 80 g of powdered sugar
  • 2 cups of cold espresso coffee
  • 1 packet of gelatine sheets (or 10 g of fish glue)
  • Unsweetened cocoa for decoration

Preparation

  1. Finely chop the dry biscuits and mix them with the melted butter until you get a homogeneous mixture. Spread this mixture on the bottom of a springform pan, pressing with hands or the back of a spoon to create a compact base. Put in the fridge for at least 30 minutes.

  2. In the meantime, place the gelatine sheets in a bowl full of cold water to soften them for about 10 minutes.

  3. In a bowl, work the mascarpone with the powdered sugar until you obtain a smooth and homogeneous cream. Then add the cold espresso coffee and mix.

  4. Squeeze the gelatine sheets and dissolve them in a saucepan with a bit of cream: make sure the flame is low and that the gelatine never comes to a boil. Once dissolved, let it cool and then incorporate it into the mascarpone cream.

  5. Whip the fresh cream and gently fold it into the mascarpone mixture, stirring from bottom to top so as not to deflate the cream.

  6. Pour the cream over the biscuit base in the refrigerator and let it solidify for at least 3-4 hours.

  7. Before serving, sprinkle the surface of the cake with unsweetened cocoa to recreate the effect of a cappuccino.
