Ingredients

  • 250 grams of dry biscuits (like Digestive)
  • 150 grams of melted butter
  • 200 grams of dark chocolate
  • 100 grams of chopped almonds
  • 80 grams of powdered sugar
  • 250 ml of fresh whipping cream
  • 2 tablespoons of honey
  • Unsweetened cocoa powder for dusting
  • Whole almonds or flakes for decorating

Preparation

  1. Begin by crushing the biscuits until they have a sandy consistency. Mix the crushed biscuits with the melted butter until you have a uniform mixture.
  2. Line the bottom of a springform pan with parchment paper and pour the biscuit mixture into it, leveling it well with the back of a spoon to create the base of the cake. Put in the refrigerator to cool.
  3. Meanwhile, melt the dark chocolate in a double boiler or microwave, being careful not to burn it. Once melted, let it cool slightly.
  4. In a bowl, whip the fresh cream with the powdered sugar until it is firm and fluffy.
  5. Add the melted chocolate to the whipped cream, also add the honey and chopped almonds. Gently fold the mixture with upwards strokes to avoid deflating it.
  6. Pour the almond and chocolate mixture over the biscuit base in the fridge and level again.
  7. Cover with plastic wrap and let rest in the refrigerator for at least 4 hours, better if overnight.
  8. Before serving, dust with unsweetened cocoa powder and decorate with whole almonds or flakes.
