Ingredients
- 300 ml of cold espresso coffee
- 200 ml of whipping cream
- 100 g of granulated sugar
- 3 egg whites
- 30 g of powdered sugar
- Cocoa powder for garnish
Preparation
- Prepare the espresso coffee and let it cool completely.
- Whip the cream with half of the granulated sugar until it is firm and set aside.
- In a separate bowl, beat the egg whites until stiff, gradually adding the remaining granulated sugar.

- Add the cold coffee to the cream and egg white mixture, stirring gently from top to bottom to maintain aeration.

- Place in the freezer for at least 4 hours, or until the spumone is well solidified.
