Spiral Coffee Cake
17/11/2023The spiral coffee cake is a charming and delicious dessert, perfect for coffee lovers. As I describe the recipe to you, I’ll add an Italian touch, allowing you to enjoy a unique interpretation of this dessert. Here are the ingredients and the procedure to make it.
Ingredients
- 4 eggs
- 120 g of sugar
- 120 g of all-purpose flour
- 1 packet of vanillin or a teaspoon of vanilla extract
- 1 pinch of salt
- 2 tablespoons of unsweetened cocoa powder
- 1 teaspoon of baking powder
- 2 tablespoons of cold espresso coffee
- 250 g of mascarpone
- 100 g of powdered sugar
- Cocoa powder as needed for decoration
Preparation
- Start by separating the yolks from the whites. Beat the yolks with the sugar until you have a light and fluffy mixture.
- Add the sifted flour, vanillin, and salt to the egg and sugar mixture. Mix gently.
- Whip the egg whites until stiff and fold them into the mixture, being careful not to deflate them.
- Divide the batter obtained into two parts. To one half, add the cocoa powder and a tablespoon of cold coffee, stirring until the mixture is homogeneous.
- Prepare two rectangular baking sheets lined with parchment paper and pour each of the batters in, leveling them.
- Bake both sheets of dough in a preheated oven at 180 °C for about 10-12 minutes. They should be soft but not too dry.
- Meanwhile, prepare the cream: mix the mascarpone with the powdered sugar and the remaining tablespoon of coffee to obtain a smooth cream.
- When the cake bases are cold, spread the mascarpone cream on the cocoa dough, then roll the dough to form a cylinder.
- Place the cylinder in the center of the non-cocoa dough and proceed to roll it around the cocoa cylinder.
- Once the spiral is formed, wrap the cake in cling film and let it rest in the refrigerator for at least an hour.
- Before serving, dust the surface with cocoa powder for a final touch.

The spiral of this cake creates a very special visual effect once it’s sliced, with the two colors alternating harmoniously. It’s an elegant dessert that can be served at the end of a meal or to accompany an afternoon tea. Coffee and mascarpone are a typical combination of Italian tradition, reminiscent of the flavors of tiramisu.
