Coffee Pudding

Ingredients
- 500 ml of whole milk
- 4 egg yolks
- 100 g of sugar
- 2 tablespoons of instant coffee (or 80 ml of strong espresso coffee)
- 30 g of cornstarch (cornflour)
- 1 pinch of salt
- Icing sugar and coffee beans for decorating (optional)
- Whipped cream to serve (optional)
Preparation

In a small pot, heat the milk without bringing it to a boil.

In a bowl, whisk the egg yolks with sugar until you get a frothy and pale mixture.

Add the cornstarch and a pinch of salt to the egg and sugar mixture, stirring well to avoid lumps.

Dissolve the instant coffee in a small amount of hot water. If using espresso coffee, ensure it is strong and cold.

Combine the dissolved coffee with the egg mixture, mixing well.

Gradually pour the warm milk into the egg and coffee mixture, stirring constantly.

Transfer everything back into the pot and cook over medium-low heat, stirring continuously until the mixture thickens and coats the back of a spoon.

Once the cream has thickened, remove it from the heat and pour it into individual molds or one large form.

Allow to cool at room temperature, then transfer to the refrigerator for at least 4 hours, or until the pudding is set.

Before serving, release the pudding from the molds by shaking them gently or running a knife along the edges.

Invert onto a serving plate, decorate with icing sugar, coffee beans, or accompany with whipped cream if desired.
