Coffee Plumcake

Coffee plumcake is a delicious and aromatic dessert that adds a refined taste to your breakfast or snack time. Here I present to you a classic version of this recipe.

Ingredients

  • 200 g of all-purpose flour
  • 200 g of granulated sugar
  • 100 g of soft butter
  • 3 eggs
  • 100 ml of strong espresso coffee (already prepared and cooled)
  • 100 ml of whole milk
  • 1 packet of baking powder
  • A pinch of salt
  • Powdered sugar (for decorating)

Preparation

  1. Preheat the oven to 180 °C and butter and flour a plumcake mold.
  2. In a large bowl, whisk the eggs with the sugar until you have a frothy and light mixture.
  3. Add the soft butter at room temperature and continue to stir.
  4. Alternately, incorporate the sifted flour with the baking powder and the pinch of salt, the milk, and the cold coffee into the mixture, making sure to mix well between each addition to avoid lumps.
  5. Pour the mixture into the prepared mold and level the surface with a spatula.
  6. Bake the plumcake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove the plumcake from the oven and let it cool completely before removing it from the mold.
  8. Dust with powdered sugar before serving for a touch of sweetness and a more elegant presentation.
