Coffee Pancakes

Coffee pancakes are a delicious twist on the classic pancakes. Here’s how to make them:

Ingredients

  • 150 g of all-purpose flour
  • 1 tablespoon of sugar
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 1 egg
  • 200 ml of milk
  • 2 tablespoons of very strong espresso or 1 teaspoon of instant coffee dissolved in a small amount of water
  • Butter as needed (to grease the pan)

Optional:

  • Maple syrup or honey for serving
  • Fresh fruit, for example, slices of banana or berries

Preparation

  1. In a bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
  2. In another bowl, lightly beat the egg with the milk and coffee.
  3. Combine the liquid ingredients with the dry ones, mixing until you have a smooth batter that is not overworked; some lumps are fine.
  4. Heat a non-stick pan over medium heat and lightly grease with some butter.
  5. Pour a ladleful of batter for each pancake into the hot pan. Cook until bubbles form on the surface, then flip and cook for a few more minutes until golden.
  6. Repeat the process with the rest of the batter, adding more butter to the pan as needed.
  7. Serve the pancakes hot with a drizzle of maple syrup or honey and, if desired, with fresh fruit on top.
