Coffee Mousse with Cigar

The coffee mousse with cigar is a refined dessert that combines the creaminess of the mousse with the intense taste of coffee and is often accompanied by a biscuit that resembles a cigar, for a contrast in textures and flavors. Here’s how to create this delight.

Ingredients

For the coffee mousse:

  • 200 ml of fresh cream
  • 100 g of dark chocolate
  • 2 egg yolks
  • 40 g of sugar
  • 2 sheets of gelatin (or 4 g of powdered gelatin)
  • 60 ml of strong espresso coffee

For the chocolate cigars:

  • 125 g of dark chocolate
  • 50 g of butter
  • 50 g of powdered sugar
  • 1 egg yolk
  • 30 g of flour
  • Cocoa powder, for finishing

Preparation

Coffee Mousse:

  1. Start by soaking the gelatin sheets in cold water for about 10 minutes.
  2. In the meantime, melt the dark chocolate in a double boiler and let it cool down.
  3. Whisk the yolks with the sugar until you get a light and fluffy mixture.
  4. Heat the espresso coffee in a saucepan, squeeze out the soaked gelatin, and dissolve it in the hot coffee.
  5. Add the coffee and gelatin mixture to the melted chocolate and mix well.
  6. Whip the fresh cream until it is firm but not too stiff.
  7. Gently fold the whipped cream into the chocolate and coffee mixture using a bottom-up motion so as not to deflate the mix.
  8. Pour the mousse into small cups or glasses and let it set in the refrigerator for at least 3 hours.

Chocolate Cigars:

  1. Melt the chocolate in a double boiler and mix with the butter until you get a smooth mixture.
  2. Transfer the mixture to a bowl and let it cool down.
  3. Add the egg yolk and powdered sugar, mix well.
  4. Incorporate the sifted flour and work the dough until it becomes smooth.
  5. Spread the dough onto a baking sheet lined with parchment paper, giving it the shape of small cigars, and bake in a preheated oven at 180 °C for about 10-15 minutes or until they are crispy.
  6. Take them out of the oven and let them cool completely. You can roll them in cocoa powder to better resemble real cigars.

Place the chocolate cigars next to the coffee mousse before serving.
