Coffee Crepes

Ingredients

  • 125g of all-purpose flour
  • 250 ml of milk
  • 2 eggs
  • 1 tablespoon of sugar
  • 1 pinch of salt
  • 30 ml of strong espresso coffee, cold
  • 30g of melted butter (plus a little more for the pan)
  • Icing sugar (for garnish, optional)
  • Unsweetened cocoa powder (for garnish, optional)

Preparation

  1. In a large bowl, sift the flour to avoid lumps.
  2. Add the pinch of salt and sugar and mix the dry ingredients.
  3. In another bowl, beat the eggs and add the milk and cold espresso coffee, blending well.
  4. Gradually pour the milk, egg, and coffee mixture into the bowl with the flour, stirring continuously to create a smooth batter.
  5. Incorporate the melted butter and mix until you have a smooth, lump-free batter.
  6. Cover the bowl with a cloth and let the batter rest for about 30 minutes at room temperature.
  7. Heat a non-stick skillet over medium heat and lightly grease with some butter.
  8. Pour a ladle of batter into the skillet and tilt it to spread the batter evenly across the surface.
  9. Cook the crepe for about 1-2 minutes or until the edges start to lift away, then flip it and cook the other side for about 1 minute.
  10. Repeat the process with the remaining crepe batter, greasing the skillet with butter occasionally if necessary.
  11. Serve the crepes dusted with icing sugar and cocoa powder, or accompany them with toppings of your choice such as whipped cream, maple syrup, fresh fruit, or melted chocolate.
