Coffee Cake

Coffee cake is a delicious dessert that combines the richness of coffee with the sweetness of a soft batter. Here’s how to prepare it, with a little Italian touch to make it even more unique!

Ingredients

  • 200 g of all-purpose flour
  • 200 g of sugar
  • 100 g of soft butter
  • 4 eggs
  • 100 ml of strong espresso coffee (preferably Italian and freshly made)
  • 1 packet of baking powder
  • 1 pinch of salt
  • Some unsweetened cocoa powder for dusting (optional)
  • Icing sugar for decorating (optional)

Preparation

  1. Preheat the oven to 180 °C and grease and flour a cake tin (or line it with parchment paper).
  2. In a large bowl, cream the soft butter with the sugar using an electric mixer until you have a light and fluffy mixture.
  3. Separate the yolks from the whites and add the yolks one at a time to the butter and sugar mixture, continuing to beat.
  4. Prepare the espresso coffee, let it cool slightly, and then add it to the mixture.
  5. In a separate bowl, sift the flour with the baking powder and salt, then gently fold it into the liquid mixture with a spatula or wooden spoon, to avoid deflating the batter.
  6. In another bowl, beat the egg whites until stiff peaks form, and fold them into the rest of the batter with gentle movements from bottom to top.
  7. Pour the mixture into the prepared tin and bake for about 30-35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  8. Let the cake cool on a wire rack before unmolding it.
  9. (Optional) Dust the surface of the cake with unsweetened cocoa powder and/or icing sugar before serving.

Curiosity

An interesting variant could be to add grated orange zest to the batter or an Italian coffee liqueur to enhance the flavor and add a distinctive touch.
