Coffee Bundt Cake

Ingredients

  • 300 g of all-purpose flour
  • 250 g of granulated sugar
  • 100 ml of vegetable oil
  • 100 ml of cold espresso coffee
  • 4 eggs
  • 1 sachet of baking powder
  • A pinch of salt
  • Powdered sugar (for decorating)

Preparation

  1. Preheat the oven to 180 °C and prepare a bundt cake pan by greasing and flouring it, or lining it with parchment paper.
  2. In a bowl, whisk the eggs with the granulated sugar until the mixture is foamy and light in color.
  3. Gradually add the vegetable oil, continuing to whisk to incorporate it well.
  4. Pour the cold coffee into the mixture and gently stir.
  5. Add the flour, baking powder, and pinch of salt, sifting them to avoid lumps. Mix until the batter is smooth and lump-free.
  6. Transfer the mixture into the prepared pan.
  7. Bake at 180 °C for about 40 minutes. Always do the toothpick test before removing from the oven: it should come out clean from the batter.
  8. Let the Bundt Cake cool in its pan for about ten minutes, then invert onto a rack to cool completely.
  9. Before serving, dust with powdered sugar to taste.
