Coffee Bundt Cake

Ingredients
- 300 g of all-purpose flour
- 250 g of granulated sugar
- 100 ml of vegetable oil
- 100 ml of cold espresso coffee
- 4 eggs
- 1 sachet of baking powder
- A pinch of salt
- Powdered sugar (for decorating)
Preparation
- Preheat the oven to 180 °C and prepare a bundt cake pan by greasing and flouring it, or lining it with parchment paper.
- In a bowl, whisk the eggs with the granulated sugar until the mixture is foamy and light in color.
- Gradually add the vegetable oil, continuing to whisk to incorporate it well.
- Pour the cold coffee into the mixture and gently stir.
- Add the flour, baking powder, and pinch of salt, sifting them to avoid lumps. Mix until the batter is smooth and lump-free.
- Transfer the mixture into the prepared pan.
- Bake at 180 °C for about 40 minutes. Always do the toothpick test before removing from the oven: it should come out clean from the batter.
- Let the Bundt Cake cool in its pan for about ten minutes, then invert onto a rack to cool completely.
- Before serving, dust with powdered sugar to taste.
