Coffee Biscuits

Coffee biscuits are a perfect delight to accompany a cup of espresso or a cappuccino. Here is the Italian recipe for making delicious coffee biscuits.

Ingredients

  • 250 g of flour
  • 100 g of sugar
  • 100 g of butter at room temperature
  • 1 egg
  • 1 egg yolk
  • 1 packet of vanillin
  • 1 pinch of salt
  • 2 teaspoons of instant coffee (or 30 ml of cooled espresso coffee)
  • 1/2 teaspoon of baking powder

Preparation

  1. In a bowl, mix the flour with the sugar, vanillin, baking powder, and pinch of salt.
  2. Add the butter in pieces and start to work the dough with the tips of your fingers to incorporate the butter.
  3. Dissolve the instant coffee in a small amount of hot water (skip this step if using espresso coffee) and let it cool. Add it to the dough along with the egg and the yolk.
  4. Work the dough until it is smooth and homogeneous.
  5. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
  6. Remove the dough from the refrigerator and roll it out on a lightly floured surface to about half a centimeter thick.
  7. With a cookie cutter or a glass, cut the dough into the desired shapes.
  8. Place the biscuits on a baking tray lined with parchment paper and bake in a preheated oven at 180 °C for about 10-12 minutes or until they are slightly golden.
  9. Remove the biscuits from the oven and let them cool on a wire rack before serving.

Curiosity

These biscuits can be customized in many ways. For instance, you can add finely chopped hazelnuts or chocolate flakes to the dough for a crunchy note in the biscuit, or cover the biscuits with coffee icing for a more intense flavor.
