Coffee Bean Biscuits

Ingredients

  • 100 g of soft butter
  • 80 g of icing sugar
  • 1 egg (room temperature)
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of instant coffee dissolved in 1 tablespoon of hot water
  • 220 g of 00 flour
  • 30 g of unsweetened cocoa powder
  • 1/2 teaspoon of baking powder
  • A pinch of salt

Preparation

  1. In a bowl, cream the soft butter with the icing sugar until you get a smooth and creamy mixture.
  2. Add the egg and vanilla extract, mix until they are well incorporated.
  3. Add the coffee dissolved in hot water and mix again.
  4. In a separate bowl, sift the flour with the cocoa, baking powder, and a pinch of salt.
  5. Gradually add the dry ingredients to the butter and egg mixture, stirring until a uniform dough is obtained.
  6. Let the dough rest in the refrigerator for at least 30 minutes.
  7. Take small portions of dough and shape them into coffee beans, using your hands to form the oval shape and then pressing slightly on one side. Remember to make a slight indentation in the center to mimic the typical groove of coffee beans.
  8. Place the biscuits on a baking tray lined with parchment paper, spacing them slightly apart.
  9. Bake in a preheated oven at 180 °C for about 10-12 minutes.
  10. Let the biscuits cool on a rack before serving.
