Baked Coffee Cheesecake

Baked coffee cheesecake is a delicious variation of the classic cheesecake. This version involves the use of espresso coffee to give a unique flavor to the dessert. Here is how to prepare it:

Ingredients

For the base:

  • 200 g of dry biscuits (like digestive cookies)
  • 100 g of melted butter

For the cream:

  • 500 g of cream cheese (like Philadelphia)
  • 150 g of sugar
  • 3 eggs
  • 100 ml of strong espresso coffee (cooled)
  • 1 tablespoon of vanilla extract
  • 1 tablespoon of flour (to thicken, if necessary)

For the coffee ganache (optional):

  • 100 g of dark chocolate
  • 50 ml of whipping cream
  • 1 tablespoon of espresso coffee

Preparation

  1. Preheat the oven to 160 °C (320 °F).
  2. Start by preparing the base of the cheesecake: finely grind the biscuits in a mixer until you get a sandy consistency, then mix them with the melted butter. Press the mixture into the bottom of a previously buttered or parchment paper-lined springform pan, creating an even layer. Place in the refrigerator to set while you prepare the cream.
  3. In a bowl, blend the cream cheese with sugar, add the eggs one at a time, making sure to incorporate each one well before adding the next.
  4. Pour in the cooled espresso coffee and vanilla extract, mixing until you achieve a smooth cream. If necessary, add a tablespoon of flour to achieve the right consistency.
  5. Pour the cream over the biscuit base in the pan and bake for about 1 hour or until the surface is slightly golden and the center still slightly wobbly.
  6. Turn off the oven, open the door slightly, and leave the cheesecake inside to cool for another hour. This step helps to prevent cracking.
  7. For the ganache, melt the chocolate together with the cream and espresso coffee in a double boiler or microwave, then allow to cool slightly and pour over the cooled cheesecake.
  8. Place the cheesecake in the refrigerator and let it cool completely for at least 4 hours, preferably overnight.
