Plumcake coffee and milk

The coffee and milk plumcake is a delicious variation of the classic plumcake, with the addition of an intense coffee aroma combined with the sweetness of milk. Here is the recipe for a delightful Italian-style coffee and milk plumcake.

Ingredients

  • 200 g of all-purpose flour
  • 200 g of sugar
  • 100 g of soft butter
  • 3 eggs
  • 100 ml of milk
  • 1 packet of baking powder
  • 2 tablespoons of instant coffee
  • 1 pinch of salt
  • Icing sugar for decorating (optional)

Preparation

  1. Preheat the oven to 180°C and butter and flour (or line with parchment paper) a plumcake mold.
  2. In a bowl, cream the soft butter with the sugar until light and fluffy.
  3. Add the eggs, one at a time, continuing to mix after each addition.
  4. Dissolve the instant coffee in warm milk and blend it into the mixture of eggs, butter, and sugar.
  5. Gradually add the previously sifted flour with the baking powder and a pinch of salt, mixing gently to avoid lumps.
  6. Pour the batter into the prepared mold and level the surface with a spatula.
  7. Bake in the oven for about 40-50 minutes or until a toothpick inserted into the center of the plumcake comes out clean.
  8. Take the plumcake out of the oven and let it cool completely before removing it from the mold.
  9. If desired, you can dust the surface with icing sugar before serving.

The term “plumcake” refers to British-origin desserts that traditionally contain dried fruit (such as plums, hence the name “plum”) and spices. The Italian version, however, is often a simple baked cake flavored in many different ways, not necessarily with fruit. In this case, the main flavor is given by the combination of coffee and milk, which makes the dessert perfect for breakfast or an afternoon break.
