Coffee and Chocolate Semifreddo

Ingredients
- 200 ml of fresh cream for whipping
- 3 egg yolks
- 100 g of sugar
- 100 ml of strong espresso coffee
- 100 g of dark chocolate
- 2 tablespoons of coffee liqueur (optional)
- Cocoa powder for decoration
Preparation
- Take the egg yolks and sugar and beat them with an electric whisk (or by hand if you prefer) until you get a light and fluffy mixture.
- Melt the dark chocolate in a double boiler or microwave, taking care not to burn it.
- Add the cold espresso coffee to the mixture of egg yolks and sugar, along with the coffee liqueur if you want a more intense taste. Mix well.
- Incorporate the melted chocolate into the mixture and stir until homogeneous.
- In another bowl, whip the fresh cream until it’s firm.
- Gently fold the whipped cream into the chocolate and coffee mixture, being careful not to deflate it.
- Pour the mixture into a loaf pan lined with parchment paper or into individual cups.
- Put in the freezer and let it rest for at least 4-6 hours. The semifreddo should become solid but still soft to the spoon.
- When ready to serve, take the semifreddo out of the freezer and let it stand at room temperature for about 10 minutes.
- Sprinkle the surface of the semifreddo with cocoa powder using a sieve for a visually pleasing effect and an extra touch of flavor.
