Preparation

  1. Preheat the oven to 180 °C and grease and flour a ciambellone pan.
  2. In a large bowl, whisk the eggs with the sugar until the mixture is light and fluffy.
  3. Add vegetable oil and cold espresso coffee, continuing to mix.
  4. In another bowl, sift the flour with the cocoa powder, baking powder, and a pinch of salt.
  5. Slowly incorporate the dry ingredients into the wet mixture, mixing gently to avoid forming lumps.
  6. Add the dark chocolate chunks (or chips) and stir with a wooden spoon or spatula to distribute them evenly.
  7. Pour the batter into the prepared pan and level with a spatula.
