Cod with Sun-dried Tomato Mince

Ingredients

  • 4 cod fillets (about 150-200 grams each)
  • 100 grams of sun-dried tomatoes in oil
  • 2 cloves of garlic
  • A bunch of fresh parsley
  • Extra virgin olive oil (as needed)
  • Salt and black pepper (as needed)
  • Lemon juice (optional)
  • Breadcrumbs (optional for gratinating)

Preparation

  1. Preheat the oven to 180 °C.
  2. While the oven is warming up, prepare the mince. Drain the sun-dried tomatoes from the oil and chop them finely with a knife. Peel the garlic cloves and chop them too, then wash and chop the parsley.
  3. In a bowl, mix the chopped tomatoes with the garlic and parsley. Add a bit of extra virgin olive oil to get a mixture that is not too dry.
  4. Arrange the cod fillets on a baking tray lined with parchment paper. Season them lightly with salt and pepper to your liking.
  5. Spread the sun-dried tomato mince over the cod fillets evenly. If desired, you can add a pinch of breadcrumbs on top of the mince to get a crispy crust after baking.
  6. Bake for about 15-20 minutes, or until the cod is cooked and the mince is slightly golden.
  7. Optionally, you can sprinkle some lemon juice over the fillets before serving.
