Cod with Raisins and Pine Nuts

Cod with raisins and pine nuts is a dish that combines sweet and savory flavors in a very interesting union. Here is the recipe to prepare it.

Ingredients

  • 600 g of soaked cod
  • 50 g of pine nuts
  • 50 g of raisins
  • Flour, as needed
  • Extra virgin olive oil, as needed
  • 1 clove of garlic
  • Chopped parsley, as needed
  • Salt, as needed
  • Pepper, as needed

Preparation

  1. First, make sure that the cod is well soaked. If you are using dried cod, you should keep it in cold water for 2-3 days, changing the water 2-3 times a day to desalt it.

  2. Once soaked, drain the cod and dry it by dabbing with kitchen paper. Remove the skin and any bones and cut the cod into medium-sized pieces.

  3. Soak the raisins in warm water for about 20 minutes to plump them up.

  4. Coat the pieces of cod in flour, making sure to flour them well on all sides.

  5. In a large frying pan, heat the olive oil and add the garlic, letting it slightly brown.

  6. Add the flour-coated cod pieces to the pan and brown them on all sides.

  7. Once the cod is browned, add the drained raisins and pine nuts to the pan. Stir gently, taking care not to break the pieces of fish.

  8. Let it cook on low heat for about 15 minutes with the lid on. If necessary, add a little water to prevent the seasoning from drying out too much.

  9. At the end of cooking, season with salt and pepper and sprinkle with fresh chopped parsley.

  10. Serve the cod with raisins and pine nuts hot, perhaps accompanied by polenta or crispy bread.

Curiosity

Cod has very ancient origins and is a dish very much appreciated in different Italian regions during the holidays, especially at Christmas and Lent. The combination with raisins and pine nuts is typical of Mediterranean cuisine and is found in various traditional recipes. The sweetness of the raisins and the crunchiness of the pine nuts perfectly complement the strong, bold taste of the cod.
