Cod with Pomegranate Sauce

Ingredients

  • 4 cod fillets (about 200g each)
  • 1 large pomegranate
  • 1 clove of garlic

Preparation

  1. Start by preheating the oven to 200 °C.
  2. While the oven is heating, extract the seeds from the pomegranate. You can cut the pomegranate in half and knock out the seeds with the back of a spoon or cut it into wedges and remove the seeds manually.
  3. In a small pan, heat a drizzle of extra virgin olive oil with a garlic clove to flavor the oil. Remove the garlic as soon as it begins to brown.
  4. Add the pomegranate seeds to the oil and cook over low heat for about 5 minutes, slightly crushing them to release their juice.
  5. Once the seeds have released some of their juice, strain the contents of the pan through a sieve to obtain a smooth sauce. Adjust with salt and pepper and return the sauce to the pan on low heat to keep it warm.
  6. Season the cod fillets with salt and pepper, then place them in a lightly greased baking dish.
  7. Bake the cod for about 10-15 minutes, or until the fish becomes tender and easily flakes with a fork.
  8. Once the cod is cooked, plate each fillet and pour over the warm pomegranate sauce.
  9. Garnish with chopped chives for a touch of color and freshness (if desired).
