Cod with Chickpeas

Cod with chickpeas is a traditional dish rich in flavors and perfect for winter days. Here’s how you could prepare it:

Ingredients

  • 300 grams of soaked cod
  • 250 grams of dried chickpeas (or a can of cooked chickpeas for a quicker version)
  • 1 medium onion
  • 2 cloves of garlic
  • 1 sprig of rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 liter of vegetable broth (if necessary)
  • 1 ripe tomato or 150 g of tomato puree

If you are starting with dried chickpeas, remember that you must soak them for at least 12 hours and then cook them according to the package instructions before using them in the recipe.

Preparation

  1. Begin by rinsing the soaked cod well to remove any excess salt. Dry it and cut it into medium-sized pieces.

  2. In a large enough pot, sauté the chopped onion with the garlic and rosemary in extra virgin olive oil until the onion is transparent, and the garlic is golden.

  3. Add the cod to the sautéed mixture and let it brown slightly on all sides.

  4. If you have opted for the use of dried chickpeas, now is the time to add them to the pot with the cod. Otherwise, drain the chickpeas from the can and add them to the cod.

  5. Cover with the vegetable broth (if using dried chickpeas, otherwise it might not be necessary to add any liquid if using canned chickpeas) and add the bay leaf and the chopped tomato or tomato puree.

  6. Bring to a boil and then lower the heat to simmer. Cook until the cod is tender and the chickpeas are cooked, about 30 minutes if they are pre-soaked and pre-cooked, or according to the cooking times if starting from dried chickpeas.

  7. Taste and, if necessary, adjust the seasoning with salt and pepper. Remove the garlic, rosemary, and bay leaf before serving.

  8. Serve the cod with chickpeas hot, drizzling with a raw extra virgin olive oil.
