Baccalà with Peppers

Baccalà with peppers is a very tasty and colorful dish, perfect for those who love Mediterranean flavors. Here’s how to prepare it with an Italian touch:

Ingredients

  • 500 g of desalted cod
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 1 large white onion
  • 2 cloves of garlic
  • 500 ml of tomato purée
  • Pitted black olives, as needed
  • Salted capers, as needed
  • Extra virgin olive oil, as needed
  • Salt and pepper, as needed
  • A handful of chopped parsley
  • Flour, for dusting the cod

Preparation

  1. Start by drying the pieces of cod well and, if necessary, remove any bones. Lightly flour the cod.
  2. Heat a little olive oil in a pan and brown the cod until golden on both sides. Once golden, remove the cod from the pan and set aside.
  3. In the same pan, add a bit more oil if needed and sauté the chopped onion and crushed garlic until they become translucent.
  4. Add the peppers, previously cleaned and cut into strips, and cook until they begin to soften.
  5. At this point, add the tomato purée, the olives, and the desalted capers. Season with salt and pepper.
  6. Cook for about 15 minutes, then place the cod back in the sauce and continue cooking for another 15 minutes, until the cod is well cooked and the sauce has thickened.
  7. Before serving, sprinkle the dish with chopped parsley for a fresh touch of color and flavor.

This dish can be accompanied by homemade bread to enjoy every drop of sauce.
