Cod with Asparagus

Cod with asparagus is a spring dish that combines the saltiness of the fish with the delicacy of asparagus. Here’s how to prepare it.

Ingredients

  • 400 g of already soaked cod
  • 1 kg of asparagus
  • 1 white onion
  • 1 clove of garlic
  • 4 tablespoons of extra virgin olive oil
  • Fresh parsley to taste
  • Salt and pepper to taste

Preparation

  1. Start by cleaning the asparagus, removing the woody part of the stem and washing them well. Then cut them into pieces of about 3-4 cm, reserving the tips.
  2. In a large pan, heat the oil and add the finely chopped onion and garlic. Sauté until they become translucent.
  3. Add the asparagus pieces (except the tips) to the pan and cook for about 10 minutes. If necessary, add a little water to prevent sticking.
  4. While the asparagus are cooking, check the cod to ensure it is well desalted and cut it into medium pieces.
  5. Add the cod to the pan with the asparagus, cover, and let it cook for further 10-15 minutes over medium heat. Halfway through cooking, add the asparagus tips as well.
  6. Check occasionally and, if you find it necessary, add a little water to finish cooking without drying everything out.
  7. Once the cod and asparagus are cooked, adjust the seasoning with salt and pepper and sprinkle with chopped fresh parsley.
  8. Serve hot, accompanied by crispy bread slices if desired.
