Lemon Cod Fillets

Ingredients

  • 4 cod fillets (150-200 g each)
  • Salt and pepper to taste
  • Flour for dusting
  • 2 lemons (juice and grated zest)
  • Chopped fresh parsley
  • 2 cloves of garlic
  • Extra virgin olive oil
  • 1 glass of white wine

Preparation

  1. Dry the cod fillets with paper towels and season with salt and pepper.

  2. Lightly dust the fish with flour, shaking off the excess.

  3. Heat a drizzle of olive oil in a non-stick pan and sauté the garlic until golden, then remove it.

  4. Place the cod fillets in the pan and brown on both sides.

  5. Deglaze with white wine and let the alcohol evaporate.

  6. Lower the heat, cover the pan, and cook for a few minutes.

  7. Squeeze the lemon juice over the pan and add the grated zest.

  8. Cook for another 5-10 minutes depending on the thickness of the fillets, until the fish is cooked but still moist.

  9. At the end of cooking, sprinkle with chopped fresh parsley.
