17/11/2023Lemon cod fillets are a light and flavorful dish. Here’s the recipe:
Ingredients
- 4 cod fillets (150-200 g each)
- Salt and pepper to taste
- Flour for dusting
- 2 lemons (juice and grated zest)
- Chopped fresh parsley
- 2 cloves of garlic
- Extra virgin olive oil
- 1 glass of white wine
Preparation
-
Dry the cod fillets with paper towels and season with salt and pepper.
-
Lightly dust the fish with flour, shaking off the excess.
-
Heat a drizzle of olive oil in a non-stick pan and sauté the garlic until golden, then remove it.
-
Place the cod fillets in the pan and brown on both sides.
-
Deglaze with white wine and let the alcohol evaporate.
-
Lower the heat, cover the pan, and cook for a few minutes.
-
Squeeze the lemon juice over the pan and add the grated zest.
-
Cook for another 5-10 minutes depending on the thickness of the fillets, until the fish is cooked but still moist.
-
At the end of cooking, sprinkle with chopped fresh parsley.
Serve the lemon cod fillets immediately, perhaps accompanied by steamed vegetables or a fresh mixed salad. The citrus note of the lemon pairs perfectly with the delicacy of the cod, creating a dish full of flavor yet light at the same time. Enjoy your meal!
