Cod Salad

Cod salad is a typical dish of Italian cuisine, perfect for an appetizer or a light and tasty second course. Here is the recipe:

Ingredients

  • 300 g of pre-soaked cod
  • 2-3 medium potatoes
  • Fresh parsley to taste
  • 1 clove of garlic
  • Black olives (pitted) to taste
  • Salted capers to taste
  • Extra-virgin olive oil to taste
  • Vinegar (white or wine) to taste
  • Salt and pepper to taste

Preparation

  1. Start by boiling the potatoes in salted water until they are soft. Then, let them cool and cut them into cubes.
  2. In the meantime, if the cod has not already been soaked and desalted, you must proceed with these steps. If it’s already ready to use, blanch it in boiling water for a few minutes until it is cooked through and its flesh becomes tender. Then, drain and let it cool.
  3. Once the cod is cold, free the flesh from the skin and any bones, and cut it into not-too-small pieces.
  4. In a large bowl, combine the cod, potato cubes, chopped parsley, and the garlic clove finely sliced or crushed.
  5. Add the black olives and previously desalted and rinsed capers. Dress everything with extra-virgin olive oil, vinegar, salt, and pepper to taste.
  6. Gently mix the ingredients to avoid breaking the cod too much and to ensure that the flavors blend well.
  7. Let the cod salad rest in the refrigerator for at least half an hour before serving, so that the flavors can meld together.

Curiosity

Cod is widely used in Italian cuisine, especially on occasions like Christmas and Christmas Eve. Depending on the region, it can be prepared in many different ways, from the famous “Baccalà alla vicentina” to “Baccalà alla napoletana”.

I recommend pairing this salad with a dry and fresh white wine, such as a Vermentino or a Pinot Grigio, which with their acidity will balance the savory taste of the cod. Enjoy your meal!
