Cod Medallions and Broccoli Rabe

Cod medallions are a simple and elegant dish, and when paired with broccoli rabe, they become a complete and very tasty meal. Here is the recipe:

Ingredients

  • 4 cod medallions (about 150-200 g each)
  • 300 g of broccoli rabe
  • 2 cloves of garlic
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • Lemon juice (optional)
  • 1 tablespoon of chopped parsley (for garnish)

Preparation

  1. Prepare the broccoli rabe: clean them by removing the outermost leaves and the too fibrous parts. Cut the florets into small, equal pieces for uniform cooking and blanch them in salted water for about 7-8 minutes or until they are tender but still crunchy. Drain and set aside.

  2. While the broccoli rabe cools, you can move on to cooking the cod medallions. Heat 2 tablespoons of extra virgin olive oil in a pan over medium-high heat and add the crushed garlic cloves to flavor the oil.

  3. Add the cod medallions to the pan and cook for about 3-4 minutes on each side, or until golden and cooked to the desired doneness. Adjust salt and pepper during cooking.

  4. In another pan, heat the remaining 2 tablespoons of oil and add the drained broccoli rabe. Sauté them quickly over high heat with a pinch of salt and pepper, just enough time to heat them up and flavor them.

  5. Plate the cod medallions and serve them accompanied by the sautéed broccoli rabe. If you wish, you can complete the dish with a drizzle of raw oil, a splash of fresh lemon juice, and a sprinkle of chopped parsley for a touch of freshness and color.
